What is Maple Syrup?
Maple syrup is a syrup usually made from the xylem sap of sugar maple, red maple, or black maple trees, although it can also be made from other maple species. In cold climates, these trees store starch in their trunks and roots before winter; the starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the sap, which is processed by heating to evaporate much of the water, leaving the concentrated syrup.
Canada produces 71% of the world’s pure maple syrup, 91% of which is produced in Quebec. Canada’s maple syrup producing regions are in the provinces of Quebec (primary producer), Ontario, New Brunswick, Prince Edward Island, and Nova Scotia. There are more than 8,600 maple syrup businesses in Canada. Most of Canada’s maple syrup is produced in the eastern province of Quebec. As the leading maple syrup producer in Canada, Quebec has by far the largest number of maple farms and, as a result, the most maple taps.
