Canola Oils Intro
Canola oil is 100% Canadian! and was first produced in 1974. The word canola is a contraction of the words Canada and ola (meaning oil). Developed in Manitoba, Canola is a “Made in Canada” innovation. Canola production is a large contributor to the Canadian economy. Canola oil is one of the healthiest cooking oils available, with zero trans-fat and the lowest amount of saturated fat of all common cooking oils. And because canola oil is so versatile and affordable, it’s ideal for making a wide range of healthy foods, both at home and on a commercial scale. Canola oil comes from the seeds of the canola plant, one of the most widely grown crops in Canada. After harvesting, canola seeds are crushed to release the canola oil.
Many dietitians believe that canola oil could be considered the healthiest edible oil. Canola oil has unique characteristics such as fatty acid composition and levels of tocopherols, phytosterols, and polyphenols. Canola oil contains about 12% α-linolenic acid (omega-3) and about 65% oleic acid. Also, it contains a low amount of saturated fatty acids (< 7%) compared to other common vegetable oils.
This oil has a high number of polyphenols.
Canola oil has received two awards: “Product Acceptance Award” American College of Nutrition “Health Product of the Year Award” American Health Foundation. Canola oil is nutritionally unique because of its fatty acid profile, having low levels of saturated fatty acids, high levels of monounsaturated fatty acids, and significant levels of n-6 and n-3 fatty acids. Canola oil also contains phytosterols and vitamin E, which may contribute to its nutritional effects.

Why Canola Oils?
consumption of canola would help most individuals modify their dietary fatty acid intake into greater compliance with public dietary recommendations. Based on studies demonstrating that increased consumption of canola oil compared with oils rich in saturated fatty acids has lipid-lowering effects, the United States allows a qualified health claim for improved heart health with canola substitution. Other potential benefits of canola oil consumption include improvements in other aspects of heart health, diabetes, kidney health, and gastrointestinal health. In addition to the evidence for these benefits based on canola oil consumption, there also is indirect evidence of nutritional benefits based on the composition of the oil, particularly in relation to the high monounsaturated fatty acid Canola oil is a versatile oil that is widely used in various preparations.
It enjoys a strong market share in the retail segment and is increasingly penetrating the food service and food processing sectors. New high oleic canola oils have become widely available and are replacing partially hydrogenated oils used in packaged foods and foodservice. Canola oil is also used in industrial applications.
Canola Oils History
Wheat evolved from the natural passage of wild species, followed by domestication and selection by humans. Wheat has been domesticated in southwest Asia for thousands of years and has spread to Asia, Africa, and Europe. Introduction to North America was made in the late 15th and 16th centuries.
In Canada, wheat was probably first cultivated around 1605 in Port Royal. The first export was made in 1654. Immigrants succeeded in the Red River colony in 1815. Netario became very popular because of its good performance and excellent milling and baking quality.
William Saunders, the first director of Dominion experimental farms, was interested in growing plants. His son, Sir Charles Saunders, took over wheat farming in 1903. He had a small marquise (12 plants), but it took several years to check that he had matured earlier than Red Fife and had excellent milling and baking quality. Wheat, distributed in the spring of 1909, quickly became popular throughout Canada. Western wheat production was growing rapidly currently, from 2 million tons in 1904 to 3.7 million in 1906 and 7.7 million in 1913. Red Fife and Marquis made Canada famous for its high-quality red spring wheat. The Marquis was later adopted as the quality standard for this class of wheat, a position that lasted until 1987.
In Canada, wheat is the most important crop, there are different types of common wheat depending on factors such as seed hardness and color, planting time (fall or spring) and the region in which it grows.
Canada is the largest producer and exporter of durum wheat, a type used in pasta.
Wheat is the largest crop and the largest exporter of all Canadian agricultural products. In fact, it is one of the top five wheat exporters in the world and the largest producer of high-protein milled wheat in the world.

Canola Oils Nutrition Information
Canola oil exhibits the best fatty acid composition among all commodity oils. It has the ideal combination of the lowest level of saturated fatty acids, a high content of monounsaturated fatty acids, and an excellent ratio of omega-6 to omega-3 PUFA. Based on the fatty acid composition, canola oil is recognized for its heart-healthy properties; this has allowed it to penetrate many markets, particularly the United States, which is dominated by soybean oil. In the United States, efforts to breed soybean oil, which mimics canola’s fatty acid composition, are proceeding at a fast pace.
Canola/rapeseed oil contains many unique compounds that can be utilized as nutraceuticals with specific health benefits. New developments in canola oil are directed to exploit unique fatty acids and minor components to provide oils with specific nutritional and application properties. New designer oils, specifically developed for their healthy properties, are offering producers and processors high value-added products and healthy alternatives for consumers.
